I love reading other blogs and getting to know bloggers through their sites. Even though I have never met any of these bloggers in person, I feel a special connection to them because I regularly read their posts. In order to introduce you to some of my favorite bloggers, I am starting a new series, Closing Comraderies. The last day of every month, I will be featuring a guest post from one of my favorite blogs.

Inside Out Caramel Apples
From The Athletic AvocadoWith autumn here, I can’t help dream about my favorite seasonal treat, the scrumptious caramel apple! Caramel and apple are a match made in heaven, but with all the butter and sugar, they are way too heavy and unhealthy for me to stomach. So instead of giving up my favorite treat, I recreated it, this time with the caramel in the inside, a fun, healthy and innovative way to enjoy that same great taste as an original caramel apple, but with no sugar or unhealthy ingredients! Make this and you will be hooked, just like I am! Inside Out Caramel Apples
- 1 apple, hollowed out
- 6-7 dates soaked in water for at least 2 hours
- 1 tsp. honey/agave
- 1/4. tsp. cinnamon
- 1/8 tsp. vanilla extract
- 1/2 Tbsp. chopped walnuts
- 1/2 Tbsp. shredded coconut

- Drain dates and place in food processor with cinnamon, honey and vanilla. Blend until smooth.
- Fill apple with date mixture. Top with walnuts and coconut.
