Peanut Butter and Bacon

Many people believe that bacon is the holy grail of food.

There is also a population which holds that peanut butter makes everything peanut better.

Like most children, my brother and I suffered from “just right phenomenon.”  Almost every Sunday, we ate chicken nuggets and french fries for lunch.  That night at our paternal grandma’s house, he ate pieces of turkey and cheese cut into triangles while I slurped on Ramen noodles.  At breakfast-time, we ate plain biscuits.  Both of us were convinced that we did not like bacon.

I am not sure when I first tried bacon, but I do know that I was a bacon-vore before my brother.  By middle elementary, though, the two of us combined could do some serious damage on a pound of bacon.  I seem to remember one summer at my maternal grandma’s house when we ate something close to a pound of a bacon every day for a week (our arteries are probably still suffering).

My relationship with peanut butter has been on-again-off-again.  During my “just-right” phase, I refused the school-given meals, opting to wait until I could eat a peanut butter and jelly sandwich at home.  Then I went for a 10+ year stretch when I could not even tolerate the smell of a pb&j.  However, by last summer, it was not odd for me to go through a jar of peanut butter a week.  Obviously, my food preferences are dynamic.

So what happens when you combine bacon and peanut butter?  Something pretty awesome!

Since you cannot call this a “quesadilla” (porque no hay queso; there is no cheese), I am calling it a “fold-over” (because that’s what you do–fold it over).

Peanut Butter and Bacon Fold-over

Ingredients

  • tortillas
  • peanut butter
  • bacon bits or chopped, cooked bacon

Directions

  • Coat a pan with non-stick spray, and bring the burner to medium-high heat
  • Place one tortilla in the pan
  • Spread 1/2 – 1 tablespoon of peanut butter on the tortilla
  • Sprinkle bacon onto the peanut butter
  • Let cook until the peanut butter is gooey
  • Fold the tortilla in half and transfer to a plate
  • Eat and enjoy

Overall, I prefer peanut butter to bacon?  Where do your loyalties fall?
