Plum-Tasty “Baked” Oatmeal


Sometimes recipes get lost/forgotten/ignored in my drafts folder.  This is one of them.  I think I made this recipe over a year ago, but I honestly don’t remember.  I just know that I was looking through drafts earlier this week and rediscovered it.

The truth is, I don’t even really remember making plum oatmeal.  When I glanced at the pictures in the post, I had to scroll to the ingredients to figure out what I had put in it.


Apparently, though, it tasted really good.  Here’s what I originally wrote (over a year ago) as a preface for this recipe:

“Just try a bite, and you won’t be able to stop! This warm, sweet oatmeal is one of the best oatmeal recipes I have ever put together.  To make things even better, it only takes about 5 minutes to make because it is “baked” in the microwave.”

I guess that I am going to have to take my own word for it 🙂



  • 1/3 cup oatmeal
  • 1/8 cup milk of choice
  • 1 banana, mashed
  • 1/2 plum, chopped (I used the other half for topping)
  • juice of 1 lemon wedge (or 1/2 tsp. lemon juice)


  • Combine all ingredients in a microwave-safe bowl
  • Microwave on high 1.5-2 minutes
  • Let cool, if necessary
  • Eat and enjoy!
