The first bowl of overnight oatmeal I ever made was The Oatmeal Artist’s orange dreamsicle overnight oats. I fell in love instantly. It was like my mouth had found an old friend.
You see, growing up, I ate ice cream religiously on Sunday nights at my paternal grandmother’s house. I have always been a Breyers lover, but I tend to go through flavor crazes (right now I love mint chocolate chip and strawberry!). At one point, my favorite was Take Two Vanilla and Orange.
If you like the summery combination of orange and vanilla, you will love this smoothie bowl. To increase the heartiness of this bowl without making it taste like raw wood, I added oatmeal that has already been cooked and cooled. The spinach is completely optional, but something is just fun about a green smoothie that tastes like oranges.
- 1/3 cup oatmeal
- 2/3 cup water
- 3/4 cup orange juice
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 large handful spinach
- 1 cup ice (optional)
- Topping ideas: berries, granola, nuts, chocolate chips, coconut, fruit
- Combine water and oatmeal. Microwave 1 minute. Cover and refrigerate overnight.
- In the morning, break oatmeal into 4-5 chunks. Place all ingredients in a blender.
- Blend until smooth.
- Transfer to bowl and top with whatever you like!
- Eat and enjoy!
