Honey Almond Chicken

September is National Honey Month and National Chicken Month


My story today has no relation to the recipe.  Instead, I thought I would share with you these two photos from 1 year ago.

Does anyone recognize these?  One year ago, I started my first full-time job.  Y’all, I had no idea what I was getting into.  All I knew was that I needed a job, and PIU needed help in the Office of Institutional Effectiveness.  A lot has changed since then.  I switched offices (and went from having endless shelves to having no shelves), I bit a hole through the straw in the pictured Pine Cove water bottle, I started grad school, I moved into my first apartment, and I attended an I.E. conference in Florida.


It’s been a good year…now let’s eat some good chicken.



  • 1/2 cup almonds
  • 1 pound boneless, skinless chicken breast
  • honey


  • Preheat oven to 400 degrees Fahrenheit.
  • In a food processor, coarsely chop almonds (for me, this was about 50 quick pulses plus 30 seconds).
  • Slice chicken into strips.  Roll each strip in almond crumbs.
  • Coat a baking sheet with nonstick spray.  Arrange chicken on baking sheet and drizzle with honey.  Bake chicken for 30 minutes, flipping once.
  • Let cool, eat, and enjoy!
