- 1 cup milk
- 1 overripe banana, sliced and frozen
- 1 tablespoon cocoa powder
- 1/2 teaspoon mint extract
- 1/2 scoop protein powder (optional)
- 2 large handfuls of spinach (for the green color, optional)
Combine all ingredients in a blender until smooth.
On a whim in September, I bought mint extract. Okay…maybe it wasn’t a whim. I had read dozens of recipes that called for mint extract, and I desperately wanted to try them. Yet, every time I went to the store, I thought, “I don’t really need mint extract.”
Then the day came: Aldi had mint extract for about half the price of other stores, and I decided that it was time to buy. After adding mint extract a bowl of chocolate oatmeal, I went a little mint crazy. Suddenly, I started making mint everything. I ate more mint muffins than I can count, I created mint pudding, I devoured several batches of mint chocolate baked oatmeal, and I even posted a recipe for mint peanut butter.
