Goodbye, April;  hello, Closing Comrade post!
This month, my Closing Comrade is Morgan from Travel Morgan Travel.   This adventurer is originally from Georgia (the state, not the country), is an Auburn graduate, and has lived internationally in Scotland and Ireland.  You can find out  more about Morgan here.Below is a post that she wrote last January while on her working vacation in Ireland.

My Auburn blanket is the one object that makes me feel at home.  Lauren Cooper (then Higgins and my roommate) gave me this blanket for my birthday freshmen year of college.  It’s been with me ever since.

I graduated from Auburn University Fall 2012, exactly 59 ½ years after my Papa, “big” Morgan Cantrell. Auburn has been a major part of our family since he first walked the Plains Fall of 1949.  Several of my family members attended Auburn University, but even more of us went to the football games. Our blood doesn’t run red (and it certainly does NOT run crimson); no, it runs orange and blue.  My Auburn blanket reminds me of that bond that our family shares.  And yes, I did stay up until 5:00am on several occasions this past season to watch my team play.

Thanks, Morgan, for sharing on my blog today.  It is amazing how something as simple as a blanket can brink comfort on long trips.  My trusty travel partner is also a blanket: the rubber duck blanket that my grandma gave me one year for Christmas.  It has been to countless states and numerous countries.

I love reading other blogs and getting to know bloggers through their sites.  Even though I have never met any of these bloggers in person, I feel a special connection to them because I regularly read their posts.  In order to introduce you to some of my favorite  bloggers, I am starting a new series, Closing Comraderies.  The last day of every month, I will be featuring a guest post from one of my favorite blogs.

Inside Out Caramel Apples

With autumn here, I can’t help dream about my favorite seasonal treat, the scrumptious caramel apple! Caramel and apple are a match made in heaven, but with all the butter and sugar, they are way too heavy and unhealthy for me to stomach. So instead of giving up my favorite treat, I recreated it, this time with the caramel in the inside, a fun, healthy and innovative way to enjoy that same great taste as an original caramel apple, but with no sugar or unhealthy ingredients! Make this and you will be hooked, just like I am!

Inside Out Caramel Apples
  • 1 apple, hollowed out
  • 6-7 dates soaked in water for at least 2 hours
  • 1 tsp. honey/agave
  • 1/4. tsp. cinnamon
  • 1/8 tsp. vanilla extract
  • 1/2 Tbsp. chopped walnuts
  • 1/2 Tbsp. shredded coconut
  1. Drain dates and place in food processor with cinnamon, honey and vanilla.  Blend until smooth.
  2. Fill apple with date mixture.  Top with walnuts and coconut.
  3. Enjoy!
